Monkey Muffins

One of my favorite blogs and required daily reads is The Pioneer Woman.  I was introduced to The Pioneer Woman over the summer by my "work wife" and was instantly hooked.  If you find yourself navigating to her page, start with her story:  From Black Heels to Tractor Wheels.  Its a great read and provides the all important background information, rhyme, reason and big smiles.  Anyway, her blog is updated frequently with stories of her life on a ranch, delicious recipes, photos and more.  Periodically, she has contests and giveaways, just to add a bit of spice to an already tasty site.  A recent recipe for Monkey Muffins caught my eye.  The pictures made them look delicious and even better, we had the ingredients in our fridge, just waiting to be transformed.  I've also awarded this recipe some major bonus points for having Monkey in the name and no bananas in the game.  After I whipped these up for breakfast, I think that Nick finally understood why this blog is on my must read list.  Since it was my first PW recipe, I thought it was more than appropriate that I blog about it!

PW site is up and ready as I started to gather my supplies.  The fact that these muffins are made completely IN THE PAN, means less mess!

Any recipe with the butter as the first ingredient is A-OK in my book!

Of course I've got to have a helper, right?  This mutt has one heck of a sweet tooth.  Or maybe sweet fang?  Either way, he was at the ready, just in case gravity would bring something yummy down to his level.

Yum.  Just a few more minutes until we got to enjoy the gooey goodness!!!!

Oh wait, the goodness gets even GOOEY-er!  The evaporated milk soaked into each muffin adding more sweetness!

 Time to dig in!!!!

Happy husband!  Coincidence that I got the Pioneer Woman's cookbook for Christmas?  I think not.
